1 cup brown lentils

1 cup rice

1 large onion, chopped

1 garlic clove minced

2 tablespoons olive oil

4 cups water

1 teaspoon salt

1 teaspoon 7 spices

1/2 teaspoon cumin 


  • Rinse the lentils and rice thoroughly and set aside.

  • In a large pot, heat the olive oil over medium-high heat.

  • Add the chopped onion & garlic - sauté for 5-7 minutes, or until the onion is soft and lightly browned.

  • Add the lentils, rice, water, salt, black pepper, cumin, and cinnamon to the pot.

  • Stir well to combine all ingredients.

  • Bring the mixture to a boil, reduce the heat to low and cover the pot with a lid.

  • Let the mudardara simmer for 40-45 minutes or until the lentils and rice are fully cooked and tender.

  • Remove the pot from the heat and let it sit for 10 minutes.

  • Fluff the mudardara with a fork and serve hot.
