Ingredients:

  • 1.5–2 kg mixed bones

  • Cold filtered water, enough to fully cover bones

  • 2 tablespoons raw apple cider vinegar

  • 2 onions, halved (skin on if organic)

  • 1 celery stick

  • 2 carrots

  • 2–3 garlic cloves (optional)

  • 2 cinnamon sticks

  • 3 bay leaves

  • A few whole peppercorns

  • Sea salt added at the end only

Method:

  1. Place bones in a large pot or slow cooker and cover completely with cold filtered water.

  2. Add apple cider vinegar and let sit 30–60 minutes before heating to support mineral extraction.

  3. Slowly bring to a very gentle simmer. Avoid boiling. Skim any foam that rises.

  4. Once simmering, add vegetables, cinnamon sticks, bay leaves, garlic, and peppercorns.

  5. Maintain the lowest possible simmer:
    Beef bones: 18–24 hours
    Chicken bones: 8–12 hours

  6. Add water as needed to keep bones submerged.

  7. Turn off heat, strain, and add sea salt to taste after cooking.
